Black Pepper (or peppercorns) are the fruits of the evergreen vine called the piper nigrum. The peppercorns are small drupes, about five millimeters in diameter, that contain a single seed. They become dark red when fully mature. The powdered pepper is produced by grinding the peppercorns.
Black pepper originated from the southern portions of India and is extensively grown there and in other tropical countries. Black pepper and other spices were such in heavy demand in the West in the olden days that it was seen as a luxury and was even used to exchange goods. Maritime expeditions and the age of colonization came about partly due to European demand for black pepper and other spices, which grew in Asia and the tropics.
The active constituents of black pepper include piperine, which is found in the outer parts and in the seed. Piperine is where the spicy heat of black pepper is derived from. Also found in the outer fruit are terpenes that include pinene, sabinene, limonene, caryophyllene, and linalool. Black pepper also contains about 3% essential oil.
