Cauliflower is an annual flowering plant that reproduces by seed. Cauliflower is typically colored white because the leaves of the plant shield the florets from the sun as they grow. Cauliflower has a compressed head, called 'curd', that is usually about six inches in diameter. It is made up of undeveloped flower buds. The flowers are attached to a central stalk. Typically, only the head of the cauliflower is eaten, while the stalk and surrounding thick, green leaves are used in vegetable broth or discarded.
Cauliflower is nutritious, and may be eaten roasted, boiled, fried, steamed, raw or pickled. It is often included as part of vegetable and meat dishes. As a standalone dish, cauliflower is often served with a cheese sauce.

However, it is also important to note that cauliflower contains purines, naturally-occurring substances typically found in plants, animals, and humans. The excessive consumption of food with purines may lead to health problems since these can lead to excess accumulation of uric acid. Gout may result from excessive uric acid. As such, people with kidney problems or gout may want to limit the consumption of purine-containing foods such as cauliflower.
