Horseradish is a perennial root crop traditionally found in western Asia and southeastern Europe. It is now grown in many parts of the globe for commercial purposes. Horseradish belongs to the same family as mustard, cabbage and wasabi.
Horseradish possesses extended, white tuberous roots that bear a stem that's typically two to three feet long. The plant propagates by root division and quickly grows from just a few cuttings. Horseradish plants spread over a large area and multiply in abundant quantities. |
Throughout history, horseradish has been used extensively for medicinal purposes. The Roman naturalist Pliny the Elder included the plant in his Natural History and recommended it as an effective herb. During the Middle Ages, both the roots and leaves of the plant were used as medicine. The root was also used as a condiment on meat dishes in Germany, Scandinavia, and Britain.
The plant is grown mainly for its aromatic roots which have a hot, fiery taste. It is said to be more intense than mustard. Horseradish is usually used in sauces and dressings that are served with cold meats or cooked fish. Its unique flavor also enhances stuffings, purees and pates.
The horseradish root contains such substances as resins, asparagines, glucosilinates (chiefly sinigrin, responsible for its pungent taste) and vitamin C and B. It is also a source of potassium, calcium, magnesium and phosphorus. Squashed roots are known to generate an antibiotic and antibacterial matter known as allyl isothiocyanate.
