Black and brown mustard seeds have very pungent tastes and the latter is the variety used to make Dijon mustard.
Nowadays, Canada is the largest commercial producer of mustard seeds, accounting for about 90% of supply. Other major producers are Hungary, the UK, India, Pakistan and the United States.
