There are over 120 different documented uses of the alliums, which can be found almost everywhere in the world. The onion has been used as an ingredient for various dishes for thousands of years by many cultures around the world. It is almost always added to food liberally in all its forms either chopped, diced, or whole. Onions can be consumed raw, cooked, fried, dried or roasted. They are also commonly used to enhance the flavor of dips, salads, soups, spreads, stir-fry and other dishes.
Certain civilizations have given onion high regard. The Egyptians, for example, used them as currency and placed them in the tombs of kings so that the deceased could carry these gifts bestowed with spiritual significance with them to the afterlife.
Onion's medicinal properties have been largely recognized since the early days by various cultures. The Chinese people have also traditionally used onions to treat angina, coughs, bacterial infections, and other respiratory problems.
Some onion varieties, particularly the yellow and red ones, are believed to contain the richest concentration of flavonoids and phenolics, thus imbuing them with the greatest antioxidant and anti-proliferative properties. It also appears that the more pungent the odor and flavor of the onion, the higher the concentration of these antioxidant properties.
The active constituents of onion include the following: quercetin, allicin, allyl sulfide, vitamins A, B1, B2, and C, palmitic acid, stearic acid, arachidic acid, oleic acid, linoleic acid and chromium.
