The vanilla orchid is a vine plant that is native to Mexico. It was discovered for the West by the Spanish conquistador Hernan Cortes who carried it back to Europe from his expeditions to the New World. At that time, the Aztec people used the aromatic vanilla as an added flavor to a popular chocolate drink. Due to its delicious flavor, the Europeans attempted to cultivate the orchid in their continent but to no avail. In 1841 however, a method of hand-pollination was discovered by a French slave and thus began the cultivation of the vanilla orchid outside of its native grounds.
Due to the elaborate and extensive process of pollinating and processing the pods or beans to maximize the extraction of its flavor and fragrance, vanilla is said to have become the second most expensive spice to produce after saffron.

The active constituents of vanilla include vanillin glucoside, and about 130 other substances, including phenols, esters, acid, carbohydrates and alcohol. Vanillin offers a lot of potential for preventing and indeed treating ailments and diseases but research on this field is only in its infancy.
