Chia is an edible seed that comes from the desert plant salvia hispanica, a species of flowering plant belonging to the mint family Lamiaceae. It possesses purple or white flowers that grow in clusters in a spike at the edge of each stem. In fact, the chia seeds were a main component of the diets of the Aztec and Mayan peoples. It is believed that the seeds were basic survival ration of Aztec warriors. They also used chia seeds to help stimulate saliva flow and to relieve joint pains and aches. Chia seeds are ranked third in importance among the vital crops of the Aztecs, behind maize and beans.
Chia seeds have a nutlike flavor and may be eaten raw. They can also be soaked in water and when the seeds turn gelatinous, it may be added to porridges, puddings and gruels. Ground chia seeds are also included in baked goods like breads, cakes and biscuits. The chia seeds can also be made into a drink known as 'chia fresca' by mixing it in water along with lemon juice and sugar.
