The sweet taste of this health food is derived from its fructose and glucose content, which make it similar to synthetically-produced sugar syrup.

When the bees perch on flowers, they typically collect the sweet nectar in their mouths. The nectar interacts with special enzymes found in the saliva of the bees during a process called 'regurgitation', and this triggers the transformation from nectar into honey. The bees then carry the honey back to their hive where it is deposited onto wax honeycombs that are found in the hive walls.

Aside from fructose and glucose, its other carbohydrate content also include maltose, sucrose and higher sugars. It also has a slight water component, as well as traces of vitamin C, riboflavin, niacin, pantothenic acid, folate, calcium, iron, magnesium, phosphorus, potassium, sodium and zinc. In addition, honey has also been found to contain certain antioxidants that help explain its medicinal properties.

Honey has a glycemic index that typically ranges from 30 to 78. It also has a pH level in the range of 3.2 to 4.5, suggesting high acidity.
