Vitamin E refers to a family of fat-soluble compounds that have the ability to stop the production of reactive oxygen species that are formed when fat undergoes oxidation. These reactive oxygen species are by-products of the interaction of the unshared electrons in free radicals with that of oxygen. These free radicals are brought about by the normal body processes in metabolism and are mostly introduced through diet and the environment. |
Vitamin E is comprised of alpha-, beta-, gamma- and delta- tocopherols and their corresponding tocotrienols. Of these, the alpha-tocopherol is recognized as the one that is most able to meet the requirements of humans. It is claimed that alpha-tocopherol shields the cell membranes from oxidation by reacting with lipid radicals produced in the lipid peroxidation process. This would then eliminate the free radical intermediates and discontinue the oxidation reaction that would produce the destructive free radicals.
Vitamin E is usually obtained by humans through their diet and supplementation. The following are the foods that have high concentrations of Vitamin E:

The commercially-available supplements of vitamin E typically provide only alpha-tocopherol. However, there are also supplements that offer the other tocopherols and even tocotrienols, but they are less readily-available.
Deficiency in Vitamin E is quite rare and overt deficiency symptoms have not been found in healthy people who obtain little vitamin E from their diets.
On the other hand, excessive use of Vitamin E supplements might lead to an increased risk of bleeding, particularly in patients taking blood-thinning agents, and in patients with vitamin K deficiency.
